Ingredients
425g green mexican tomatillo, crushed, drained. Reserve the juice
425g mexican refried pinto beans
1 cup pure avocado pulp
1 cup sour cream
1 tbsp fajita seasoning
1 cup mild cheddar cheese sauce
1 cup pitted kalamata olives, sliced and drained
lightly salted tortilla chips

Method
1. Reserve 1/2 cup drained tomatoes, set aside.
2. Blend remaining tomatoes and reserved juice with beans in small bowl.
3. Spread bean-tomato mixture into 8x8 inch glass dish.

4. Blend sour cream and fajita seasoning mix together in small bowl.

5. Spread over bean-tomato mixture.
6. Spread over guacamole.
7. Top evenly with layers of cheese, olives, green onions, and reserved tomatoes.
8. Chill for 2 hours prior to serving.
9. Serve with tortilla chips!
