Servings: 4

Ingredients
4 halibut fillets (each fillet should weight about 4 ounces)
1 tbsp cajun all purpose blackening
1 tbsp olive oil
4 tbsp orange marmalade
3 tbsp water
2 tbsp lemon juice
1/4 teaspoon cracked pepper

Directions
1. Sprinkle both sides of the fish fillets with the cajun blackening; pressing gently to adhere.
2. Coat a large non-stick skillet with cooking spray.
3. Add in oil and heat over medium-high heat until hot.
4. Add fillets; cook for 3 minutes on each side or until fish flakes easily.
5. Remove fillets from skillet; set aside and keep warm.
6. Add orange marmalade and the remaining ingredients to the skillet.
7. Bring mixture to a boil; cook for 1 minute.
8. Pour sauce over fish fillets; serve immediately.
